I need to eat more radishes – cooked like this, they’re so good. This is my brunch for one, but it would make a side for two (or just double it). I finish mine with crème fraîche and a sprinkle of my bacon crumb, but leave that off and it’s vegetarian.
Ingredients
- 15 g butter
- 150 g radishes large ones halved, small ones left whole
- 50 ml water
- salt
- 50 g frozen peas or petits pois
- lemon zest
- black pepper
- 1 tbsp dill chopped
- crème fraîche to serve
- bacon crumb to serve, optional
Instructions
- Melt the butter in a wide frying pan until bubbling. Add the radishes cut side down and cook for a couple of minutes to colour.
- Add the water and a generous pinch of salt, turn the heat down, cover and simmer for 5 minutes, turning once.
- Turn the heat up a little and let the water bubble away, then add the peas and cook for a couple of minutes, tossing so everything is glossy.
- Off the heat, add a little lemon zest, black pepper and most of the dill.
- Serve topped with a dollop of crème fraîche, the rest of the dill and some bacon crumb if you like.
