Ingredients: 375 g pack ready rolled puffed pastry; 1 egg (beaten); 320 g jar onion marmalade (or homemade); 100 g fresh blackberries (optional); 1 tsp thyme leaves; 150 g log of goat's cheese (cut into 12 slices); extra virgin olive oil (to drizzle)

Rectangular puff pastry tart topped with a red jam-like layer, blackberries, and round slices of goats' cheese, garnished with herbs and pink peppercorns. The crust is golden and flaky.
